I would like to have diabetic friendly recipes that use tofu. I have never used tofu before, and I am intrested in adding it to my diet. My diet mostly consists of lean meats (turkey, chicken, shrimp), fruits, and vegetables. No pasta, no rice, no potatoes, and no breads. I’m just not sure how to cook tofu. I do make lots of vegetable soups and salads. Thanks for all your help!

Tofu has to be cut into thin slices. Then you pat it down with a towel to remove all the water. Afterwards, you fry the tofu. Once it is fried, you create a sauce. I like to use 4 tablespoons of bbq sauce with 2 ketchup packets, 1 teaspoon of mustard, 4 spoons of brown sugar, water, and 2 shakes of cayene pepper.

You then put the tofu into the sauce and let the sauce thicken up for about 5 minutes.

Since you are diabetic, you could substitute the brown sugar with diet sugar and reduce the amount of ketchup and BBQ sauce you use.

PS-Chinese restaurants also make Sesame tofu and General Tso’s tofu. You can substitute the rice with steamed vegetables, since you are diabetic and share some of the tofu with someone you know.
